La Fregate perches on the hillside above St Peter Port harbour, a two-minute walk from the town centre. The hotel combines the charm of an 18th-century manor with contemporary styling and levels of cuisine and service that are increasingly rare. Many of the rooms enjoy breathtaking views of Guernsey's island neighbours, and several boast private balconies. Dining in the hotel's window-lined restaurant is a refreshing experience. The decor is cool and unfussy, the service smooth, and Chef Neil Maginnis' cooking reflects this deceptively simple approach . Using top quality ingredients from local seafood, fish and vegetables, Neils' classical methods allow the flavours to burst through in many memorable creations. Quite simply divine.
