A fine Grade II-listed Georgian manor house, secluded Washingborough is little more than two miles from the cathedral city of Lincoln. Inside, all rooms are individually decorated. Some feature exquisite curtain detail and tasteful floral wallpapers. Two of the rooms have elegant four-posters. Flatscreen TVs and L'Occitane toiletries can be found in each, along with tasty homemade biscuits. Lincolnshire couple Edward and Lucy (and their three little girls) own and run the hotel. Lucy, a trained cook, works alongside the head chef to create unfussy menus. In the Dining Room Restaurant you might start with endive, pear and roquefort salad, follow with beef Bourguignon and parsnip puree and finish with a chocolate espresso cake. The hotel is a member of the Tastes of Lincolnshire, and as much as possible produce is sourced from these parts. Aside from Lincoln's magnificent cathedral (third only to York Minster and St. Paul's in size), there's Tattershall Castle with its 15 th century tower and moat as well as beautiful country seats Belton and Burghley House. The majestic Lincolnshire countryside offers opportunities for golf, clay pigeon shooting, spoil yourself at a spa, fish, or just trample around in your wellies.
