Tan-y-Foel means 'the house under the hillside', and perfectly describes this delectable hideaway set in eight acres of woodland and pasture with views stretching away to Snowdonia and the Conwy Valley. Garlanded with praise from all quarters, Tan-y-Foel is the only five-star country guest house in Snowdonia National Park; its six guest bedrooms are so stunning and imaginative that it is hard to drag yourself away, whilst on the culinary front, Janet, a Master Chef of Great Britain, has earned a Restaurant of the Year Award from The Good Food Guide for her outstanding cuisine. These accolades offer a gentle hint as to what to expect. A traditional Welsh stone-built country house from the outside, Tan-y-Foel's contemporary interior design comes as a complete surprise. Earthy tones from beige and jute through to terracotta predominate, and dark teak ornaments suggest an Oriental influence that is echoed in Janet's cooking. A signature dish from her daily changing menu is Assiette of Welsh Organic Rhug Estate lamb - provencal breadcrumb coated loin, braised shoulder, sauteed liver, oven dried tomato tapenade, wilted red spinach, garlic and onion potato puree - followed by Creme chiboust and home grown strawberries. For visitors exploring the surrounding area, Conwy and Caernarfon castles are bastions of Welsh history; Bodnant Gardens are a must for garden lovers, and the wilds of Snowdonia beckon one and all.
