Ballingarry, near Adare. Into it he has put his restaurant and his love for the space and elegance of a bygone age, plus a wealth of today's comforts and amenities. Guests are welcomed for dinner with an overnight stay in one of the 16 bedrooms, all beautifully decorated and furnished. There are seven acres of lawns, pleasure grounds and, above all, peace; inside, the library has an unusual and excellent book collection.
The restaurant is memorable. Great care is taken to source ingredients from the best of Ireland's organic farms and cheesemakers, and the herbs are grown in the garden. The menu is made up of the delightful flavour of the very best of Irish cuisine, both traditional and modern, and is complemented by a serious wine list.
