Situated as it is in a national park with little farmland, the Gliffaes kitchen has access to some especially good lamb and beef, even for the already high Welsh standards, while in winter the menu includes the best of local game and traditional root vegetables. Two-thirds of the produce is sourced from within 50 miles of the hotel and fish comes only from sustainable fisheries.
