You do not have to be a hot house flower to benefit from a stay at Cashel House, but the utter peace, fresh Connemara sea air and the McEvilly family's total dedication to their guests' enjoyment will leave you feeling as cosseted and resplendent as any prize horticultural bloom. Cashel is a wonderful base for getting to know Ireland's dramatic Atlantic coast, but it can be hard to tear oneself away from the truly spectacular gardens which date back to the first owners of the house in the mid-19th century. Himalayan shrubs such as rhododendrons, azaleas and camellias flourish here alongside native heathers and ferns. Gardening enthusiasts attend Cashel House Hotel's frequent gardening courses. The floral influence extends to the warm and welcoming house with its colourful chintzes and antique furnishings glowing in the light of traditional turf and log fires. Connemara's lakes and coastline stock the chef's larder with fresh lobster, salmon and shellfish, while the garden provides many of the fresh vegetables served in the dining room. To build up an appetite do take the opportunity to explore the grounds on foot or on horseback, borrow a rowing boat to navigate the bay, or venture a little further afield for golf and fishing.
